Heather Comb Honey is cut from the honey combs produced by our bees in the autumn months whilst the bees are on the heather moors of Northumberland.
Raw Honey
What is raw honey? Raw honey means honey that is left as the bees intended, basically unheated and not pasteurised. Our heather comb honey is cut from the comb and is just as the bees left it so is in effect the most raw honey available.
Suprisingly alot of producers heat honey to excess, whereas ALL our honey could be considered raw as it is not heated about hive temperature and not pasteurised.
Storing and Using Heather Comb Honey
Comb honey is simply cut from the comb, and if it stays dry should last indefinately. Despite comb honey having been found in pharaohs tombs 2000 years old and reportedly still edible, to maintain the shelf life of honey takes some care.
Occasionally if honey gets moisture into it it can be liable for a spontaneous fermentation to occur due to the natural yeasts and enzymes present. The same enzymes that carry all the benefits of honey!
How to Store Honey
Keep honey at ambient temperature, and in a dry place. Nontheless even at room temperature honey can ferment, so the best thing to do is use the honey, rather than sitting on it for a long period of time. Avoid anywhere that moisture can get into the honey.
